 A buttermilk sky in Texas is the stuff of dreams. It happens when clouds ripple across the sky in white dollops, hinting at what some call the mottled or lumpy appearance of buttermilk. 

Buttermilk is a “go-to” ingredient in Southern recipes, whether it enhances biscuits, waffles, fried chicken, or a rich, flavorful classic pie. 

Just like in life, if there are little lumps in your buttermilk, they can be stirred away.

Texas Buttermilk Pie

Ingredients

  • 5 eggs
  • 2.5 cups of sugar
  • 1 cup buttermilk
  • 6 Tablespoons flour
  • 1 stick butter
  • 2 teaspoons vanilla
  • 1.5 Tbsp fresh lemon juice
  • .5 Tbsp lemon zest
  • Two unbaked pie shells (either your own, or refrigerated)

Do

  • Beat the eggs until fluffy.
  • Mix sugar and flour.
  • Melt butter and mix with the buttermilk.
  • Combine the eggs, sugar/flour mixture and the butter/buttermilk.
  • Add vanilla, lemon juice, lemon zest.
  • Pour mixture into the two unbaked pie shells.

Bake at 375 degrees for 10 minutes; then reduce heat to 325 degrees and bake one more hour.  Or, just bake for 300 degrees for 1 ½ hours. These options depend on your oven.
